  • 1 tsp sesame oil

  • 1 tbsp fresh lime juice
  • ½ tsp finely grated lime zest
  • 1–2 tsp cold water, as needed

  • 2 scallions, thinly sliced
  • 1–2 tbsp toasted sesame seeds

How to make Szechuan Inferno chicken tacos

Four-step cooking process for HOFFEE Szechuan Inferno chicken tacos

1. Mix the glaze

In a small bowl, whisk together HOFFEE Szechuan Inferno, soy sauce, rice vinegar, sesame oil, garlic and ginger. Set it beside the stove. The sauce thickens quickly once it hits the hot pan, so having it ready matters.

2. Sear the chicken

Pat the chicken pieces dry. Heat a large skillet over medium-high heat, add the neutral oil, then add the chicken in a single layer. Leave it undisturbed for 2–3 minutes so it develops colour before tossing.

Continue cooking until the chicken is browned on several sides and almost cooked through. Chicken pieces should reach a safe internal temperature of 74°C / 165°F before serving; Health Canada publishes the current poultry temperature guidance here.

3. Make it sticky

Lower the heat to medium. Pour in the prepared Szechuan glaze and toss continuously. Let it bubble for roughly 2–4 minutes, until it has reduced enough to cling to the chicken rather than pool in the bottom of the skillet.

Do not walk away here. The sweet elements in the sauce mean the glaze can move from glossy to scorched faster than a thin vinegar-only hot sauce.

4. Char the pineapple

Transfer the chicken to a clean plate and wipe out the skillet. Return it to medium-high heat. Add the pineapple pieces in a single layer and let them sit long enough to pick up dark caramelized spots, about 1–2 minutes per side.

5. Build the slaw

Combine the cabbage, carrot, cilantro and warm charred pineapple in a bowl. Add lime juice, sesame oil and a pinch of salt, then toss. Keep the slaw crisp; it should taste fresh and acidic enough to cut through the sticky chicken.

6. Make the lime crema

Stir the sour cream or Greek yogurt with lime juice, zest and salt. Add cold water a teaspoon at a time until it becomes drizzleable.

7. Warm the tortillas

Warm the tortillas in a dry skillet for about 20–30 seconds per side, or until soft and pliable. Stack them under a clean towel so they stay warm while you finish the tacos.

8. Assemble

Add sticky Szechuan chicken to each tortilla, followed by pineapple slaw and lime crema. Finish with scallions, sesame seeds, cilantro, jalapeño if using, and a squeeze of lime.

How spicy are they?

Szechuan Inferno sits toward the hotter end of the current HOFFEE range, but the final taco is more balanced than eating the sauce straight. Pineapple sweetness, cabbage, tortilla and crema spread the heat across the whole bite.

This is a good recipe to serve family-style. Put the chicken, slaw, crema, herbs, lime and tortillas in separate bowls and let everyone build their own tacos. Recipe variations

Use pork instead of chicken

Thin strips of pork tenderloin work well with the same glaze. Cook until safely done, then reduce the sauce around the meat just as you would with the chicken.

Make it vegetarian

Use extra-firm tofu or roasted cauliflower. For tofu, press it well, cube it, sear until crisp, then toss with the glaze at the end.

Make taco bowls

Reheat the chicken until steaming hot, then assemble with cold slaw and crema. Do not reheat assembled tacos if you can avoid it—the tortillas soften and the slaw loses its crunch.

Can I make these tacos ahead?

Yes. The glaze can be mixed a day ahead, and the vegetables can be shredded in advance. For best texture, char the pineapple and dress the slaw close to serving time.

Do I need pineapple?

No, but the sweet-acidic fruit is a strong match for Szechuan Inferno. Mango is the easiest substitute. For less sweetness, skip the fruit and add extra lime to the slaw.

Can I use flour tortillas?

Absolutely. Corn tortillas add a stronger toasted corn flavour, while flour tortillas are softer and slightly more neutral. Use whichever you prefer.
