Rosemary Inferno BBQ Steak Skewers

The gourmet steak sauce hits the grill. These Rosemary Inferno BBQ steak skewers combine juicy beef, charred peppers, red onion and mushrooms with an herb-forward sweet-heat glaze built around HOFFEE Rosemary Inferno Toffee Hot Sauce.

This is the kind of recipe Rosemary Inferno was made for. The sauce already leans savoury and herbal, so it fits grilled beef naturally instead of tasting like sweetness was added as an afterthought. The result is glossy, peppery, rosemary-forward steak with caramelized edges and enough habanero heat to keep the whole thing interesting.

If you are trying to decide where Rosemary sits in the lineup, use the HOFFEE Heat & Flavor Guide. If you are still wondering what makes a toffee-based hot sauce different in the first place, start with What Is Toffee Hot Sauce?.

Why Rosemary Inferno belongs on steak

Steak already brings richness, browned fat and deep savoury flavour. Rosemary Inferno works because it adds three things steak loves: herbal aroma, acidity and controlled heat. The sauce's sweet-toffee base also helps the exterior glaze and caramelize on the grill.

  • Rosemary and beef: a natural herb-and-meat pairing.
  • Habanero warmth: enough heat to wake the steak up without burying it.
  • Sweet glaze: helps create glossy, lightly caramelized edges.
  • Acid and seasoning: keeps the final bite from feeling too heavy.

How to make Rosemary Inferno BBQ steak skewers

Four-step process for Rosemary Inferno BBQ steak skewers

1. Marinate the steak

Whisk together Rosemary Inferno, soy sauce, Worcestershire sauce, garlic and lemon juice in a large bowl. Add the steak cubes and toss until every piece is coated.

Cover and refrigerate for 20 to 30 minutes. You do not need a long overnight marinade here. The goal is to season the exterior and give the steak Rosemary Inferno flavour without turning the surface soft.

2. Build the skewers

Remove the steak from the marinade. Thread steak, red onion, bell pepper and mushrooms onto the skewers, alternating the ingredients. Leave a little breathing room between pieces instead of packing everything tightly together.

Brush or toss the vegetables very lightly with olive oil. Season with a small pinch of salt and black pepper.

3. Preheat the grill properly

Heat your grill to high heat and clean the grates well. Lightly oil the grates just before the skewers go on. A properly hot grill is what gives the beef and vegetables the char that makes this recipe taste like BBQ instead of steamed meat on sticks.

4. Grill over high heat

Grill the skewers for about 8 to 10 minutes, turning every few minutes so the steak browns on multiple sides and the vegetables develop charred edges.

Use a digital thermometer rather than judging doneness only by appearance. Health Canada lists 63°C / 145°F for medium-rare, 71°C / 160°F for medium and 77°C / 170°F for well-done whole-cut beef. See Health Canada's current safe cooking temperature guidance.

5. Glaze near the end

During the final minute of grilling, brush the skewers with a thin layer of fresh Rosemary Inferno. Waiting until the end gives you a glossy coating while reducing the chance of scorching the sauce over direct high heat.

6. Rest and finish

Transfer the skewers to a platter and let the steak rest for several minutes. Finish with chopped parsley, lemon wedges, optional flaky salt and more Rosemary Inferno at the table.

The trick: glaze late, not early

Rosemary Inferno contains sweet elements, so treating it exactly like a thin vinegar hot sauce is a mistake. If a sugary glaze sits over fierce direct heat for too long, it can darken before the steak is ready.

Use the sauce in the marinade for flavour, then apply your finishing glaze during the final minute. You get caramelization without sacrificing the herb-forward flavour that makes Rosemary Inferno different.

Rosemary Inferno BBQ serving guide with steak skewers and side dish ideas

What to serve with Rosemary Inferno steak skewers

This recipe is made for a full backyard spread. Good side dishes include:

  • Charred corn with butter and herbs
  • Potato salad
  • Crunchy cabbage slaw
  • Grilled broccolini
  • Baked beans
  • Warm flatbread
  • Rice pilaf
  • Herby yogurt sauce or chimichurri

If you are serving a group, put multiple HOFFEE bottles on the table. Rosemary works beautifully with beef, but some guests may want the lighter heat of Golden while others may want to climb higher. The HOFFEE 5-Pack turns a BBQ into an easy side-by-side tasting.

Can I use a different cut of steak?

Yes. Sirloin is easy, relatively lean and skewers cleanly, but strip steak also works well. Ribeye tastes fantastic but is richer and can be harder to cube consistently because of its fat seams.

Whatever cut you use, aim for pieces that are roughly the same size so they cook at a similar rate.

Can I make these without skewers?

Absolutely. Use the same marinade on full steaks, grill them to your preferred doneness, rest them, slice them and brush with Rosemary Inferno before serving.

You can also use the recipe as a steak-bowl base: grilled steak, peppers and mushrooms over rice with extra Rosemary Inferno and a cool yogurt sauce.

Make-ahead strategy

Cut the vegetables and steak earlier in the day and refrigerate them separately. Mix the marinade ahead as well. Wait until 20 to 30 minutes before grilling to actually marinate the beef.

If using wooden skewers, soak them before cooking. If you want the easiest setup, reusable metal skewers are ideal for high-heat grilling.

Frequently asked questions

How spicy is Rosemary Inferno on steak?

Rosemary Inferno sits in the middle of the HOFFEE range at about 3/5 on the brand's heat ladder. On steak, the meat and vegetables spread the heat across each bite, so the final dish tastes warm and savoury rather than overwhelmingly hot.

Can I use Rosemary Inferno as a steak sauce without cooking it?

Yes. Serve it directly at the table as a finishing sauce. The grilled steak already brings the char; uncooked Rosemary Inferno preserves more of its fresh herb character.

What other BBQ foods work with Rosemary Inferno?

Try it with grilled chicken thighs, pork chops, lamb, sausages, mushrooms, roasted potatoes and grilled vegetables. For more pairing ideas, see the HOFFEE Heat & Flavor Guide.

Can I double this recipe?

Yes. Double everything, but grill the skewers in batches if your barbecue becomes crowded. Leaving space around the food helps it brown instead of steam.

Why this belongs in the HOFFEE recipe rotation

Rosemary Inferno BBQ Steak Skewers show off exactly what makes this particular sauce useful: it does not behave like a novelty hot sauce. The rosemary, savoury spice and controlled habanero heat make it feel like a genuine grilling ingredient.

If Golden Inferno is the wing-night bottle, Rosemary Inferno is steak-night magic.
